- 1/4 cup warm water
- 1 tsp yeast
- 1/3 cup butter
- 1/2 cup sugar
- 1 egg
- 1 TB vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup whole milk
- 1 1/2 cups all purpose flour
- 6 ounces of fresh blueberries (about 3/4 cup)
Topping
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp cinnamon
- 1/3 cup melted butter
Preheat your oven to 350'. In a small bowl, combine yeast and warm water. Let sit until yeast is dissolved; about 5 minutes. Meanwhile, cream butter and sugar in a largish mixing bowl. Add egg, vanilla, spices, baking powder, baking soda, salt, and yeast mixture. Stir to combine. Stir in milk and flour. Stir in blueberries. Lightly grease a muffin pan with some of the melted butter. Divide the batter evenly among the muffin cups, and bake for 15-20 minutes: until the tops are an even golden color. Meanwhile, for the topping; pour the melted butter into a bowl, then combine the cinnamon and sugars in a separate bowl. When the muffins are done, remove from the pan immediately. Dip the tops of each first into the melted butter, then into the cinnamon sugar. Enjoy!
