Serves 8-10
Ingredients
- 1 pound of sweet potatoes (1 large)
- 1/2 cup butter, softened
- 1 cup white sugar
- 1/2 cup milk
- 2 eggs
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 9 inch unbaked pie crust
1. Boil sweet potatoes whole in skins until tender. Run cold water over sweet potatoes, then remove skin.
2. Combine sweet potato and butter in a mixing bowl, and mix on medium speed until pureed. Add remaining ingredients (except the pie crust, haha) and continue mixing until completely smooth.
3. Pour into the pie crust and bake for about an hour; until a knife inserted into the center comes out quite clean. Remove from oven. The pie will puff up like a souffle while baking, so allow it to sink down before slicing and serving.
