Serves 6-8
Ingredients
- 9 inch unbaked pie crust
- 6 pieces of bacon, fried and crumbled
- 1/2 of a medium white onion, chopped
- 3 eggs
- 1 cup of milk
- 1 cup of high quality cheddar cheese (swiss or gruyere also work well)
- Salt and Pepper
Directions
- Preheat oven to 375'. In a bowl, beat the eggs with a fork. Beat in the milk. Add salt and pepper to taste, and set aside.
- Sprinkle half of the cheese over the bottom of the pie crust. Next, layer the onions and bacon, then pour egg mixture into pie crust. Sprinkle remaining cheese on top.
- Bake until the a knife inserted into the center of the pie comes out clean (aside from a bit of clear liquid) and the top is nicely golden brown: about an hour. Remove pie from oven, and let set for 10-30 minutes before slicing and serving.
