Quiche Lorraine

This is the basic Quiche recipe in my kitchen. Something magical happens while it bakes, and it truly is greater than the sum of it's parts! It's delicious exactly like this, but there is room for some welcome additions: I'm thinking some red bell pepper chopped along with the onion, or circles of vine-ripened tomatoes adorning the top!

Serves 6-8

Ingredients
  • 9 inch unbaked pie crust
  • 6 pieces of bacon, fried and crumbled
  • 1/2 of a medium white onion, chopped
  • 3 eggs
  • 1 cup of milk
  • 1 cup of high quality cheddar cheese (swiss or gruyere also work well)
  • Salt and Pepper

Directions
  1. Preheat oven to 375'. In a bowl, beat the eggs with a fork. Beat in the milk. Add salt and pepper to taste, and set aside.
  2. Sprinkle half of the cheese over the bottom of the pie crust. Next, layer the onions and bacon, then pour egg mixture into pie crust. Sprinkle remaining cheese on top.
  3. Bake until the a knife inserted into the center of the pie comes out clean (aside from a bit of clear liquid) and the top is nicely golden brown: about an hour. Remove pie from oven, and let set for 10-30 minutes before slicing and serving.
