Biscuits



















I've long been searching for a healthy* biscuit that strikes the right balance between fluffy and flakey, is still pull apart tender, and delivers all of the old fashioned flavor I love. Here I give you the the product of years of tasty (and some not so tasty) experiments. The search is over at last!

Yield: 8 Biscuits
Ingredients
  • 1 cup all purpose flour
  • 1 cup whole wheat pastry flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda (scant)
  • 1 tsp salt
  • 4 TB cold unsalted butter (cut into slices)
  • 7/8 cup plain nonfat yogurt
  • 2 tsp honey
  • Milk

Directions
  1. Combine first 5 ingredients in a medium sized bowl. Cut in the butter with a pastry blender until it is the size of small peas. 
  2. Mix the honey with yogurt, then stir into the dry mixture. If the dough does not hold together, stir in milk 1 teaspoon at a time until a single ball of dough forms (be careful not to make it sticky!)
  3. Roll dough out on a lightly floured surface until about an inch in thickness (don't knead the dough if you can help it.) Cut out biscuits (use a biscuit cutter or a small, round cup) and space 2 inches apart on an ungreased cookie sheet. Bake @ 425' for 10-15 minutes, until the tops and bottoms are nicely golden brown. Be careful not to let the bottoms burn, (it's easy to do!) you can always use the broiler setting for a minute to make the tops golden if you need to.
*These biscuits are much healthier than most for several reasons. #1 is that they have half whole wheat flour, instead of %100 white.  #2 is they have half the butter of regular biscuits, and #3 is, because they have nonfat yogurt in place of buttermilk/whole milk, they're much lower in fat overall. And of course, they're all natural. Finally, I don't feel bad about serving biscuits on a regular basis!
