Simple Artisan Bread




This is a very easy, very rewarding loaf of bread to bake. Family who have spent many summers in France have said that this can even compare to the authentic loaves sold at the local boulangeries!

Yields one loaf

Ingredients

3 Cups All Purpose Flour*
1/4 tsp Yeast
2 tsps Salt
1 1/2 Cups Tepid Water
Additional Flour for dusting


1. Combine flour, salt and yeast in a large bowl. Pour in water, and mix until flour is moistened.

2. Cover with plastic wrap, and leave at room temperature for 18-22 hours. The dough will have risen, and have visible bubbles on the surface when ready.

3. Turn our onto a moderately floured movable surface (such as a wooden cutting board.) With floured fingers, fold each of two sides halfway over the top. Cover with lightly floured plastic wrap, and allow to rise for 2 more hours.

4. Preheat oven to 450' 30 minutes before bread is to be baked. Place a heavy pot, such as a large Le Creuset into the oven to preheat for the 30 minutes.

5. When the dough has finished rising, take the pot out of the oven, and flip the dough seam side down into the pot. Do not worry about it's shape, it will be lovely when you take it out of the oven. Score the bread as desired, then replace the lid on the pot, and return to the oven.

6. Bake for 30 minutes with the lid on, then remove the lid, and bake for an additional 15 minutes, until nicely browned. Flip onto a cooling rack, and wait at least 20 minutes before slicing.

*I have used 1/3 to 1/2 Whole Wheat Flour with excellent results as well!
